New Experiment for Tomorrow-using Paul's Flour and a Milk Kefir Poolish

I have figured out a formula to try to use the flour Paul (Paul'sPizza), sent me from England.  I wanted to try something special with Paul's flour, but really didn't know what to try.  I finally decided to use a milk kefir poolish  in combination, with a high hydration and also use some honey in the formula.  I will post pictures of the flour and finished dough ball.  I have no idea how this will work, when made into a pizza.

I will post pictures and what formula I used, whether the pizza turns out good or not.
