A Few Pictures of the Preferment Lehmann Dough at Market 5/17/2011

A few pictures of the preferment Lehmann dough pies, made though the course of yesterday.  As can be seen, the pizza looks can change, depending on the time of day, how long the pie is in the oven, how the dough is opened, and many other factors.  I still believe each pie has its own “finger print” even though it came from the same dough batch, depending on many factors.
As also can be seen, the more the day goes on, the more tired I look..lol  First thing in the morning it isn't too bad, but later in the day, it can get tiring making pizza all day, especially for me, since I am older.
I like a darker rim, but many of my customers don't.  They are used to what looks like real NY style pies.
