I as invited to my friends home to bake some of my Peter Reinhart's doughs and some doughs my friend made. I love to watch how my friend Steve's WFO bakes. The flames and fire will never cease to amaze me. There is something about a pizza baked in a WFO that can't be matched. The fast bake and the taste of the crust is just so good.
These are pictures of Steve's WFO and the pies we baked on 2/18/2011.
Thanks Steve to you and your family for inviting to your home! :)

This is a blog about my learning knowledge to make pizza. I have been helped by many people on my journey
Welcome...
There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Peter Reinhart’s Country Pizza Dough February 2011
This is the thread about me making two kinds of Peter Reinhart’s doughs.
http://www.pizzamaking.com/forum/index.php/topic,13037.0.html
The first pies were baked in my friend Steve’s WFO. The second Country Pizza Dough was baked in my home oven using this formula.
Formula I used for the country dough at:

Norma's WFO pizza: "Since it was nice the last two days in my area, my friend Steve (Ev) invited me to his home last evening to bake in his WFO. This pizza was a Peter Reinhart Classic Pizza Dough, Neo-Neapolitan Style with 75% hydration and almost 4% olive oil, made with Better for Bread flour. This pie was delicious as pies made in a WFO are so much better in my opinion. Dressed with San Marzano tomatoes and fresh mozzarella

A Pizza Girl Needs to Party, too!!! 2/10/2011
Some of my friends and family ask me to go out partying each week, but I am getting to old for that, but once in awhile I give in a do go out for a night out of dancing, joking and just having fun. I did have fun Saturday night and danced almost all night long. Some of the family and friends at our table are crazy and make me laugh, with all their funny things they do and say. I didn't get pictures of all the people that were at our table. Someone else took the pictures. I did make a poolish on Saturday for a pizza, so I guess I am still a Pizza Girl, too! That darn John, my nieces husband, he does the craziest stuff as can be seen when he was trying to dance with me..lol
