Paulie’s pizza pan that he gave all of the pizza fanatics that went to visit his pizzeria is now hung on the wall of my small pizza stand at Root’s Country Market and Auction. I love the pizza pan with Paulie’s autograph! :)

There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Steve (my friend), the man with many Pizza Ovens 6/14/2012
My pizza friend Steve has many pizzas ovens to bake in. He is very talented and also a great handyman that can do almost anything with his building skills.
He has an oven at home that can go 500 degrees F and makes Greek style pie, many NY styles pies and also Sicilian pies. He also built a portable oven that he can take along to places he vacations or also to church for youth groups. Steve also build his own WFO at his home. Now, Steve and his friend Bob are going into a new adventure with a WFO that they put into an old Airstream trailer. The WFO in the Airsteam trailer has taken a lot of work and Steve and Bob both figure as they go. I am sure that their new adventure will go well.
These are Steve pizza ovens he can bake in. The new one in the WFO hasn’t been baked in as of now, but soon will be after they finish the build of their Airstream. They haven’t decided on a name for the WFO business yet. My hat is off the Steve and Bob! They are both great men that have many skills.
