The “Old Faithful” dough ball acted normally this week. I think my refrigerator must have been too high of a temperature, from putting too many cooked foods inside to cool, or either I had given the dough last week too many rest periods last week, that the dough ball developed the bubbles on top of the dough ball. There weren’t any bubbles on top of the dough ball this week and the dough ball looked like it fermented normally.
The “Old Faithful” dough ball was fairly easy to open, but still felt somewhat dry. The end pizza did taste like a NY street pizza.
I don’t know what experiment to do next with the EL-7 product.

There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Working Outside Today..in my garden, mowing, and pulling weeds 7/06/2011
I worked outside today for about 4 hours. It is getting hot in our area again, with much humidity today. It was around 92 degrees F today and it sure had me sweating. I guess I am getting older and the outside work does get to me when it is so hot.
I staked some more tomatoes, mowed, weed wacked, and pulled weeds around my flowers and in my garden.
These are a few pictures of my garden, tomato plants and flowers that are blooming now.

My Wheat Berry Starter and Wheat Berries Trying to be Sprouted 7/07/2011
I think my wheat berry starter is starting to take off. This morning there were some more bubbles, so I started transitioning the wheat berry starter to white flour. I did feed it this morning and am going to feed it more white flour and water this evening. My wheat berry sprouts aren’t doing as good. I am now wondering if I have soft winter wheat berries. The water in the jar, that I keep rinsing keeps getting a bubbly foam on the top and when I move the glass far, I can see bubbles (I guess fermentation bubbles) come up to the top many times. There are no sprouts on the wheat berries.

Sprouting Wheat Berries and using Ground Wheat Berries in a starter..7/04/2011
The wheat berries were rinsed and put into clean water this morning. I tasted a few wheat berries and now they are softening up. I also fed the ground wheat berry starter last evening.
I was thinking about trying to grow some wheatgrass to juice, but read the wheat berries need to be hard winter wheat. Since I don’t know what type of winter wheat I have, I won’t try growing wheatgrass until I am sure I have the right kind. I also read there are many other things that can be made from wheat berries like: made into cereal if boiled, used in homemade bread (chopped and blended in blender), stir in with rice, added to cookies, muffins, pancakes, or waffles, add to casseroles, stuffed peppers, meatloaf, meatballs, pasta sauce, mushroom and sprout sauce, added to sandwich spreads like tuna, avocado, chicken, and egg salad, sprinkled on yogurt, and sprinkled into stir-fry. I also read where wheat berries can be toasted to make a snack or used in other ways. I think the wheat berries need to be soaked first before they are roasted. Wheat berries that have been soaked can also be toasted in a pan.

Growing my Tomatoes for pizza sauce, to eat, or for pizzas 7/3/2011
I took some pictures this morning of how all my tomato plants are doing. I had lots of extra tomato plants I had grown from seed, and just planted a lot of them anywhere (in the sun, shade, or part sun and shade) to see how they would do.
The tomato plants in my small garden are doing the best. They are staked. They are almost 6' tall now. The only tomatoes that have ripened so far are the grape tomatoes and the pear tomatoes.
