Steve and I went to visit Pizza Brain today (along with visiting 3 other pizzerias in the Philly area) and guess who we saw when we first got there. Paulie Gee. What a pleasant surprise! Guess Pizza Brains think alike.

The pizza was great at Pizza Brain today!
Steve and I went on a pizza tour today with Pizza Brain being our first stop.
The guys at Pizza Brain are so friendly and Pizza Brain pizzas are delicious. Steve and I only ordered 2 slices and split them, because we were going to eat more pizzas later. If we wouldn’t have been going to eat more pizzas later, I sure know I would have tried more slices. The slices we ate were really great. The toppings were perfect and the crust was great. They use the best pepperoni on their pies. The sauce was so well balanced and the other ingredients used make a perfect pizza in my opinion. I will go back to Pizza Brain sometime and try more pies.
We got to go outside and look at the mural. It also looked great!
I decided to try the pizza ice cream at Little Baby’s Ice Cream Shoppe and it did taste exactly like a pizza.
I asked at what temperature they bake their pizzas and they said they turn the oven the whole way up to 650 degrees F. I also asked how long the pies bake and they said about 5 to 6 minutes depending on how many pies are in the oven.

There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

The Easy-Peasy Pizza
I was working outside on and off most of the day getting ready for colder weather and chopping down a lot of flowers and generally weeding.
I gathered some Italian tomatoes, yellow pear tomatoes, cherry tomatoes and some basil from my garden. I decided to use them to make a pizza. The dough was easy to roll out and I used a fork to prick the skin. Then I spread some pesto over the skin that I had made last week (it was defrosted from the freezer). A three blend of Grande cheeses was added (given to me by Bob1) then tomatoes, sprinkled with sea salt and cracked black pepper, then more of the 3 blend cheese was added. Next I used a sprinkling of EVOO over the top and brushed the rim skin with milk. After the pie was baked I used some fresh basil to dress the pizza.
The crumb was the lightest flakiest crumb I have ever tasted. I enjoyed this easy-peasy pizza.
Of course, some Renaissance Faire Sangria went well with this pizza. :)
In my opinion this would be a great snack.
I cheated and didn't make my own dough. I used frozen puff pastry dough..lol!
