There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Our Kittens, Have Been Adopted! 6/25/2011

It was a sad day to have to give our 8 little kittens up for adoption, but also a happy day that they were adopted.  We raised Chance, our one little kitten from the day her mother abandoned her, and we brought her back to life.  That day was March 30, 2011.  Lucky, her sister died after she was 10 days old and we don’t know why.  Chance had to be bottle fed around the clock, just like a real baby.  My daughter and I had many challenges, but also much happiness from Chance and then her siblings, there were found outside later.  They all were from 2 local stray cats, that had springtime babies.  Chance and Lucky even had to be stimulated to go to the bathroom all the time.  That is the way with little kittens.

We knew we couldn’t keep all eight kittens, and would someday have to give them up for adoption.  We toyed with the idea of keeping one or two, but since there are two dogs in our home and they are older and my dog really doesn’t like cats, we gave up on that idea.  All the kittens were kept in my one bigger bathroom and had many play toys.

We saw on the news and in the newspaper that this week our local Humane League was having a free week for adoption of cats or kittens.  This is the first time that has happened.  Usually it is 110.00 to adopt a younger cat or kitten.  We hated to take the kittens down to the Humane League, but knew that had to be done.  We took them there Thursday night.  That was really a sad night, because we had learned all the kittens personalities and what they liked and didn’t like.  We went to the Humane League on Saturday afternoon to see if the kitten might have been adopted, but we hated to go, because seeing them would be hard.  My daughter and I were both happy to see all the eight kittens were adopted.  We got to pet them and see them but I couldn’t help but to cry, because I missed them so much.  There were feelings of gladness and sadness both at the same time.  Hopefully the kittens will have good homes and live to be old cats.
