Welcome...

There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Steve and Bob's progress with their Airstream and WFO 6/5/2012

These are pictures of Steve’s and Bob’s progress with their old Airstream and their new WFO which they are going to go mobile with sometime in the near future. The Airstream looks great and they have started to polish it now. In the one picture it can be seen how shiny the Airstream is with Steve’s hands.

I am excited for my friends and they have both done such a good job of converting the Airstream. I wish both of them lots of luck when they finally get finished and open their new venture. They are both great people.  They soon will be living the dream of operating a WFO in an Airstream.  Both Bob and Steve did build their own WFO's at their home.  Both of them are so handy in everything they do.

More on Steve's oven builds at http://learningknowledgetomakepizza.blogspot.com/2012/06/steve-my-friend-man-with-many-pizza.html  Steve is a man with many talents.  So is Bob.  He also built a WFO on a trailer and a Weber conversion.  I don't have the pictures of Bob's Weber conversion, but his WFO on his trailer is posted on my blog.  I really like Bob's Weber grill to pizza oven conversion!

Now Bob and Steve have illumination! Lights on. :)
