There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Pizza Rat Delilah Eats Detroit Style Pizza at Market.

I was a pizza at market today making pizzas. The top of the hat can't be seen, but it was also a pizza. I even wore my pizza socks today. It was almost the end of market today, and a man came up to the stand and asked if we had any Detroit style pizza left. I said there is a dough in the proofer, but it would take about 15 minutes to bake. The man said he would be back because he loves Detroit style pizza. When he came back my helper and I saw he had a friend with him. The friend was a rat named Delilah. Delilah was very friendly and we petted her. Delilah was licking her chops waiting to get a taste of the pizza. When I gave the slice to the man Delilah wanted some Detroit style pizza too. The resulting video is of Delilah eating the Detroit style pizza. You never know what is going to happen at market.

Pizza Quixote came to visit my small pizza stand

Some photos from when Marty (Pizza Quixote) came to visit my small pizza stand. The tomato pie was made by Pizza Quixote. He did a great job from stretching the dough to making the final pizza.

It was a pleasure to meet Pizza Quixote and get to talk to him abut all the good pizzas he has enjoyed!

Summertime Peach Delight Detroit Style Pizza in the Blackstone pizza unit

Oh, the power of yeast.:)  I brought home two Detroit style dough balls from market that were highly fermented and then froze them. The power was off too, so I did not know if the dough balls would be any good. I took a frozen dough ball out of the freezer and put it into the refrigerator before I went to market today. When I got home it still was partially frozen. It was pressed in a steel pan anyway and put it into the oven with the light on. The dough rose well.

I decided to make a “Summer Peach Delight” pizza out of the dough. I started with a higher temperature in the BS but saw that the cheese probably was bubbling too much. Then the temperature was lowered. The final “Summer Peach Delight” turned out delicious in my opinion. Aleppo peppers were used in the sauce for the peaches. The new cheese was used in combination with cheddar. I like the taste of the cheese blend on this Detroit style pizza.

Detroit Style Pizza baked in the Blackstone Pizza Oven

The BS baked a great Detroit style pizzas too! I used a leftover dough ball from Tuesday early this evening and quickly tempered it in the oven with the light on.  The dough ball almost look lifeless, but it still rose after pressing it in the steel pan and tempering it.  I should have tempered the dough a little while more in the steel pan, but saw it soon was going to start getting dark outside.  I had started to heat up the BS on a lower temperature for 30 minutes.  The IR gun shows what temperature this Detroit style pizza was baked at.  I did fiddle around with the height of the flames a little while the pizza was baking. 

The dressings on this Detroit style pizza were spinach, sausage (under the cheese), cheese and then sauced after the baked.  The bottom crust was nice and crispy and so were the caramelized edges.
