There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

My granddaughter's first and second attempt at making pizzas!! :)

My granddaughter is my helper at my little farmer's market pizza stand right now. She asked at the end of each week if she could try to make pizzas.

She did a great job both times. I sure took a long while before I could open pizza dough like she can. Since I am only open one day a week, she can get much practice in making pizzas. I am too busy the rest of the day to let her try to make pizzas.

New Sign for market since the one ripped that Dave made for me


The sign that my friend Dave made me for outside of market ripped (the paper sign part was made on butcher paper) this past Tuesday from the windy conditions outside.  I painted both sides of the sign white and did try to paint the sign somewhat like Dave made the sign in the first place, but since I am not an artist like Dave is I can not draw like he does.  The two-sided sign is one heavy bugger to move for me.

I purchased a few Italian tomato plants, some different peppers and two basil plants to plant outside when the danger of frost is over.

Drexel Hill Style Pizza, Broomall on Steve’s and My Pizza Tour

This was the last pizzeria we visited. In a matter of a few hours we tried pizzas from 4 pizzerias. I didn’t see a website for Drexel Hill Style Pizza, but this is their menu.

This was one kind of Greek style pizza Steve remembered from long ago, but Steve said it wasn’t his favorite. He told me he didn’t think the cheese and sauce were applied to the edges like Greek Styles here on the forum, but we would wait and see when we got there. Drexel Hill Style Pizza is owned by Greeks and first opened in 1968.

The pizzas were already sitting in the steel pan with sauce and cheeses already applied. Steve was right that the sauce and cheese weren’t applied to the edges like here on the forum.

Steve and I were getting perturbed that it was taking so long to bake the pizza. We both though that the pizza would be too dry from the long bake. We didn’t time the bake, but it was long for a 10” pizza. It can be seen in the picture of the ovens (to the left of the ovens), the stack of pizzas pile up waiting to be baked. I wonder how the dough doesn’t proof too much sitting at room temperatures.

I think Steve and I could taste the cheddar in the cheeses, and this pie was good, but would have been a lot better if it wasn’t baked as long. The young gal tending to the pizzas and oven sure didn’t seem like she checked them very often and seemed to just go back in the room.

Steve remembered that the building that Drexel Hill Style Pizza is in was a firehouse at one time. There were pictures on the wall of the firehouse.

Visited Pizza Brain Today!! :)

Pizza Brain Museum and Pizzeria


My daughter and I took a road trip to Philadelphia to go to the 9th St. Italian Market and also to visit the Pizza Brain Museum since it was supposed to be such a nice day. We left this morning about 9:00 am so we could look around 9th St. Italian Market first for awhile. I knew Pizza Brain wouldn’t be serving pizzas until 5:00 pm, and knew we wouldn’t be staying in Phila. that long, but Pizza Brain was supposed to open the Pizza Brain Museum at 11:00 am. When we got to the Pizza Brain Museum it had a sign on the door that said, Contrary to our posted hours below we will won’t be opening until 5:00 pm today, sorry for any inconvenience. I thought darn, but looked inside. I saw one man inside and decided to just take a few pictures outside. A lady walked inside the Pizza Brain Museum and I then decided to wave my hand to see if I could take a few pictures inside. The gentlemen were kind enough to let me take some pictures inside and even turned on the lights for me. The gentlemen told me I could come back at 5:00 pm when they opened and I told them I wouldn’t be in Phila. for that long.

I talked the man behind the pizza prep area and he was getting ingredients ready for the pizzas. I then talked to all of the guys that were inside Pizza Brain and they all sure a great bunch of guys and seemed like a lot of fun. They are aware of pizzamaking.com and said this forum helped them with their pizzas. They said Scott Weiner was there for Pizza Brain opening night.

I didn’t get a lot of pictures because I didn’t want to bother them too much. I thought what I saw was really interesting. I am sorry, but some of my pictures are blurry. I thought it was interesting how the floor had some cut-outs with pizza related things inside the cases in the floor.

I wished the guys at Pizza Brain the best of luck and said I will come back again when they are in full operation. I can’t wait to try their pizzas.

The pictures start with when we left 9th St. Italian Market. It only took about 15-20 minutes to get to Pizza Brain from the 9th St. Italian Market.

I also took some pictures when leaving Philadelphia of the building and of one glass building. It looked so neat with the clouds reflecting in the glass. I am not sure of what building that is.

Pizza Brain is a great place to visit!! :)
