There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Another Day Working Outside, Planting More Tomato Plants, Weeding, and Painting! 6/12/2011

It was cloudy this morning so I decided to go outside and get some more work finished.  I love digging in the dirt, planting anything, and watching things grow.  My cucumbers plants are already producing some cucumbers, but they aren’t ready to eat.  I love to be able to just go outside and pick fresh vegetables, even though my gardens are small.  Friday, I saw some little buggers on my San Mazarno tomato plants.  I posted on pizzamaking.com what they could be, because they were rapidly starting to eat my leaves, just on the San Marzano tomato plants.  Steve, my pizza making buddy, replied to my post that he thought the “little critters” were potato beetle larvae.  It turns out he was right! :) I think I have all the damaged leaves pick off and also all the little potato beetle larvae.  At least I didn’t see anymore today.  It was really getting hot outside, so now I am inside waiting for more storms in our area. Another day with tornado warnings. I don't know why we are getting so much violent weather, but I guess that is the way it is. I think I planted another 20 tomato plants today.  I also got some more painting finished.
