Adam Kuban mentioned Paulie Gee wearing a “Norma’s Pizza” hat on Slice.
Thanks Adam! Never thought I would make it into the weekly pizza news with such a small pizza business. Thanks also to Paulie and him even being interested in wearing my pizza hat from a small farmers market stand that only operates one day a week.

This is a blog about my learning knowledge to make pizza. I have been helped by many people on my journey
Welcome...
There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Happy to link to it, Norma. I thought it was a nice story that illustrated the connections between pizza-makers.
ReplyDeleteAdam,
ReplyDeleteThanks again! I guess all pizza makers have a common link even if they are great pizza makers like Paulie Gee. Paulie is such a nice man and took the time the two times the pizza fanatics visited his pizza business to joke and have fun with us. I have enjoyed his pizzas tremendously the two times I went to Paulie’s pizza business. I was so proud to see Paulie wearing a pizza hat from such a small pizza business. Goes to show what a great man he is!
