Welcome...

There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Scott Wiener of “NY Pizza Tours”..Meet Scott, look at his website and pizza pictures 5/06/2012

This post is about Scott Wiener and his great adventures in learning about pizza and visiting Italy. This link is about Scott Wiener. http://www.scottspizzatours.com/meetscott and part of the quote from his post. “I got home and took a solid job in audio production, but I found myself spending all of my weekends driving around the area to try different pizzerias. I organized field trips for my friends and tapped into New York’s strong pizza community. It all culminated on my 26th birthday when I rented a yellow cheese bus and took 30 of my friends to a few of my favorite spots. By the time I returned the bus, I knew I had found my calling. Some people deliver pizza to people; I would deliver the people to the pizza.” This is the website for Scott’s Pizza Journal and his Scott‘s Pizza Tours in NY. http://blog.scottspizzatours.com/

I saw this article on Scott’s Pizza Journal about first reference to Pizza as a Pie NY.

Really interesting article!!

I am friends with Scott Wiener on facebook and asked him if he minded if I wrote a post about him on my pizza blog and included some pictures of when he visited Italy. Scott said he didn’t mind if I posted about him on my blog and included some of his pictures.

Scott is an awesome man!
