There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

BBQ Grill Set-Up for Pizzas

I had asked members on pizzamaking.com if some of my ideas might work for my BBQ grill to set it up to grill pizzas.  It took me awhile to get this built, but members did help me to make my BBQ grill better for making pizzas.  My BBQ grill can get much hotter than my home oven or market oven.  This is what I asked members on pizzamaking.com

I will post more about the BBQ grill set-up in the future and also all the pizzas I tried in my BBQ grill set-up.

This is the first pie I tried and also the first series of set-ups.  I will post the rest of the pies I made in the BBQ grill that I made this past summer.  I cut each firebrick by hand, using tools I found in my shed. I still need to work on the BBQ grill set-up next spring.
