There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Sicilian Pizza with Preferment for Lehmann Dough

Whoever would have thought the Easter Bunny might like pizza. I guess he does. I made some chocolate Easter candy for my grandchildren and great-grandchild this morning. Making your own chocolate is easy and also fun. At least I got to make some chocolate pizza today. My mom also likes chocolate, so she also will get some Easter bunnies eating pizza.
Mark and his family came to Root’s market on Tuesday and visited my small pizza stand. It was a pleasure meeting him and his family. He gave me a really nice write-up. I sure wish he could come back and get behind the stand and make some pizzas.
I am now glad I didn’t have enough Better for Bread flour for the next iteration of the Sicilian pizza I am trying for market. The Ceresota flour with the same formulation I used better worked out better in my opinion. I kept the same TF as before.
The dough ball was opened cold and that also seems to work well. The pan was oiled with not too much corn oil. The dough was then proofed in the steel pan on top of the deck oven. A blend of mozzarellas was applied, then the sauce. The sauce was thinned some for this attempt and it was applied with a bottle in stripes. A little of Larry’s Greek Oregano was sprinkled on last. The pie baked well and the crumb was soft and moist, with a little crisp on the bottom crust. The bottom crust baked evenly in this attempt. I think the only thing I might try for the next attempt is to apply more sauce in another row of stripes going the other way.
My grandson’s favorite food is pizza, and he wanted to have his birthday party at Chuckie Cheese. My grandsons parents decided to invite only close family for my grandsons birthday party at Chuckie Cheese. I have fond memories of Chuckie cheese, but haven’t been there for many years.
The birthday party was supposed to be late yesterday afternoon, but someone became ill, so the party was cancelled until today at noon. I still like Chuckie Cheese pizzas, but sure not as much as I once did. To almost make matters almost worse last evening when the party was cancelled until today, my oldest daughter took me out to dinner at the Press Room. http://pressroomrestaurant.com/ I never tried their pizza at the Press Room before, http://pressroomrestaurant.com/dinner_pizza.html and almost couldn’t resist trying it, but somehow I managed to order something other than pizza. Some of the people were ordering pizzas before the show at the Fulton Theatre and they sure looked good to me.
It was a lot of fun for my grandson and great-granddaughter at Chuckie Cheese today. We were there for a long while, but it sure brought back good memories.
