There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Hurricane Irene in our area..8/27/2011--8/28/2011

Hurricane Irene wasn't really bad in our area.  There was about 5" of rain from yesterday afternoon until this morning, and a lot of high gusts of winds, but we were lucky in our area.  They are calling for flooding in our area, from all the rain. Our power only went off once.

I hope other people and places along the East coast are okay. My whole family that lives in different places is okay.

Edit:  There was flood damage in our area, and when I went to market on Monday 8/29/2011, there were flattened corn fields in our area and a lot of trees that had fallen over.  Scattered debris over different roads and other damage. I know some of my friends went without power for at least 24 hrs.  I feel sorry for anyone in the path of hurricane Irene that had damage or other problems because of the hurricane.
