There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Hot!!! weather, my gardening, painting, fixing the deck, and hybrid Reinhart dough ball.....6/09/2011

It has been usually hot in our area for this time of June and in the last two days the heat index is over 100 degrees F.  It sure is too hot for doing a lot of work outside, but I need to get a lot of outside work done.  Over last weekend I had sanded my deck and patched some places in the wood, where is was starting to go bad.  The deck got painted Sunday, and then it was on to the porch furniture on the deck.  Sanding that and painting isn’t that much fun, but it needs to be gotten done this year.  I finally got my deck and most of my porch furniture painted yesterday.  I did work on my garden a little too.  I almost roasted..lol   Today I sanded and painted some cast iron flower pots, a dinner bell and a pulley I hang flowers on.  At least I can come in and get cool once in awhile.  I found an interesting Greens Mediterranean Mix of lettuce and other things at a garage sale for 3.00.  It can be cut and used though out the summer.  I already used some of it for salads. More perennials are blooming and I soon need to plant some of the tomato plants I started from seed.  I did plant some, but have way to many tomato plants to plant.  Maybe someone will want the rest.

My extra hybrid Reinhart dough is still cold fermenting about 5 days.  I will see when it needs to be frozen to try at market next week. The dough that is still cold fermenting should give a better flavor to the crust.
