There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

There are many ways to go about trying to make any kind of pizzas you want to create. PIZZA making is fun and also you get to eat your finished product. Mexican Pizza at my Funnel Cake Stand

When I had my Funnel Cake stand I added different foods.  Some of the foods I added were Mexican.  I made freshly made tacos, burritos, quesadillas, taco salad and even Mexican PIZZA.  I guess that was my start of making pizza at market.  The Mexican pizzas I made were either made with chicken for my other Mexican foods, or with hamburg, that had spices added.  The Mexican pizzas were also topped with taco sauce and fresh salsa.  I used the same tortillas shells that I used for taco's and taco's salad.  I bought the corn and flour frozen tortillas from a distributor.  I haven't tasted such good taco salads since then.  I do miss all the Mexican food I used to make.  The Mexican pizzas were also good, in my opinion.  :)  The Mexican pizzas were made in the Panini Grill.  At least there was even top and bottom heat on both flat plates.

In addition to Mexican food and Mexican pizza, I sold freshly made funnel cakes, Hand Dipped Ice Cream, Lemonades, Limeades, Orangeades, Frozen Lemonades and fried Oreos, Twinkies and other foods.  I really loved this stand and if it would have been able to be open all year, I don't think I would have started making pizza. ;(

Pictured in these pictures are my granddaughter that helped me at this stand, her one girlfriend, my granddaughters boyfriend, my friends from NY and me.  I really also miss all the ice cream I ate at the Funnel Cake Stand..  Everyone wanted to make Funnel Cakes the day these pictures were taken.
