There are so many variables that go into making a PIZZA. The hydration of the dough, flour, yeast and many more.. Amounts of any kind of yeast in a pizza can make a big difference. Most recipes posted on the web, use too much yeast in their recipes. What I have found out so far, is either bulk fermenting the dough or cold fermenting the dough will give a better flavor in the crust. I am still experimenting to find different flavors in the crust of pies. In my opinion pizza is all about the best flavor you can achieve in a crust. I still am on the journey about flavors in the crust. Even differences in temperatures in you home or times of the year can influence how much yeast to use. If you want a pizza to develop flavors in the crust, there are many ways to go about achieving this.

Memorial to my Late Husband

I wanted to post about my late husband near the time of his passing almost two years ago.  He was a great husband.  Both of us wanted only a memorial service when either of us passed.  These are some of the pictures when there was a memorial service for him.  Hospice was involved in his last months of his life.  Hospice is a very caring organization.  My husband was alert until a few hours of his passing.  I still can't imagine all he went though in after his fall at home.  He had worked full-time up until the fall.  No one knows what they might have to go though in life.  He was a very determined person, always.

My husband always believed in helping people that were less fortunate.  We were never rich, but he did what he could.  He also believed that family was the most important thing in life.

At least we had the opportunity to enjoy some vacations to really nice places.  We both always talked about those vacations and how much they meant to us.

He also enjoyed enjoyed sports, and will listen or watch them every chance he had. He loved going to garage sales, flea markets and antique sales.  We both always shopped for bargains.

If I never would have met my husband, I don't think I ever would have started making pizza.  I learned from him to be independent and always strive for your goals, even if you fail.

Christmas was always my husbands favorite time.  Even if we had to work a lot, he enjoyed listeming to Christmas songs.  It was sad he had to pass before Christmas.  At least I believe he is now in a much better place, along with his relatives, my relatives and other friends.
